Neem je brisket uit de koelkast en laat op kamertemperatuur komen. Snijd eventueel teveel vetmassa weg.<\/p>\r\n<p>Masseer licht met een appelcider azijn, de zuring zorgt dat het vlees mooi mals blijft.<\/p>\r\n<p>Breng dan op twee zijden de <a href=\"https:\/\/notjustbbq.nl\/nl\/shop\/herbs-en-spices\/grinders\/everyday-grinder\/\">Every Day Seasoning<\/a> aan. Start je rookproces op. Wij gebruiken <a href=\"https:\/\/notjustbbq.nl\/nl\/shop\/smoking-wood\/smoke-chunks\/smoke-chunks-whisky\/\">whisky smoke chunks<\/a> NIEUW vanaf dit seizoen in ons assortiment. (vijf smaken: beuk, appel, hickory, whisky en kers).<\/p>\r\n<p>3. Snijd de aardappel en wortel grof. Hol de kool een stukje uit. Pak de kool in, in aluminiumfolie. Leg de brisket op het rooster, direct boven de kolen en rookhout. Na 2 uur, leg het deels gerookt brisket in een schaal en voeg water toe tot vlak onder het vleesoppervlak. Het water zorgt ervoor dat het teveel aan zout uit het vlees trekt.<\/p>\r\n<p>8. Duw een vleesmeter in het vlees en rook de brisket nog verder door tot een core temp van 190 graden Celcius. Zodra de temperatuur is bereikt, pak het vlees en de schaal helemaal in met aluminiumfolie. Leg de half ingepakte kool ernaast om te roken.
